Let’s Eat!!

Who here doesn’t need to eat? In the Bible, we frequently see the value in sharing a meal together, and here at Baxter we appreciate meals spent together as well!

Throughout the Bible eating together is used as a method to fellowship with one another. We see this in Luke 10:38-42 where Jesus eats with Mary and Martha and again as Jesus shares His last moments with His disciples teaching at the Last Supper. In the Bible, meals are a good opportunity to grow closer to one another and it’s safe to say meals have the same effect in today’s day and age as well.

Everyone needs to eat to survive, so naturally sharing the time together to satisfy that necessity is something special. We have a lovely kitchen staff that prepares eighteen meals a week for our students. They arrive as early as 5:30 in the morning to get started and leave around 6:00 in the evening. It is truly uplifting to see the time they put in to keep everyone fed.

María Concepción “Chon” Zapata de Vázquez, or “Mama Chon” as the students call her, and Elena Castillo have been serving in the kitchen for a whopping twenty-eight years. A year ago, we added Enedina Machado to our staff. All three of these women have become staples at Baxter, and it’s safe to say that we absolutely love their cooking. When asked their favorite thing about working in the kitchen, the resounding answer was the ability to serve the students. We are so thankful for their servant hearts and the food in our bellies.
